Description

A moist and flavorful bread combining pineapple and coconut for a tropical twist.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup shredded coconut
  • 1 cup crushed pineapple (drained)
  • 1/3 cup coconut oil
  • 1/2 cup honey
  • 2 eggs
  • 1 tsp vanilla extract


Instructions

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. Mix flours, baking soda, salt, and shredded coconut in a bowl.
  3. In another bowl, whisk pineapple, coconut oil, honey, eggs, and vanilla.
  4. Combine wet and dry ingredients. Stir until just mixed.
  5. Pour batter into the pan. Bake for 45-50 minutes.
  6. Cool before slicing.
