Description
A moist and flavorful bread combining pineapple and coconut for a tropical twist.
Ingredients
- 1 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup shredded coconut
- 1 cup crushed pineapple (drained)
- 1/3 cup coconut oil
- 1/2 cup honey
- 2 eggs
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- Mix flours, baking soda, salt, and shredded coconut in a bowl.
- In another bowl, whisk pineapple, coconut oil, honey, eggs, and vanilla.
- Combine wet and dry ingredients. Stir until just mixed.
- Pour batter into the pan. Bake for 45-50 minutes.
- Cool before slicing.
Notes
- Drain pineapple well to avoid excess moisture.
- Substitute honey with maple syrup if preferred.
- Store in an airtight container for up to 3 days.
