Description
A quick and healthy pizza-inspired skillet casserole with beans, vegetables, and cheese.
Ingredients
- 1 can (15 oz) white beans, drained and rinsed
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- 1/2 cup diced bell peppers
- 1/2 cup sliced mushrooms
- 1/4 cup sliced black olives
- 1 tsp dried oregano
- 1/2 tsp garlic powder
- 1 tbsp olive oil
Instructions
- Heat olive oil in a skillet over medium heat.
- Add bell peppers and mushrooms. Cook for 3 minutes.
- Stir in beans, marinara sauce, oregano, and garlic powder.
- Cook for 5 minutes, stirring occasionally.
- Sprinkle cheese on top and cover until melted.
- Garnish with black olives and serve hot.
Notes
- Use any beans you prefer.
- Add more vegetables if desired.
- Top with fresh basil for extra flavor.
