A simple, budget-friendly stew made with basic ingredients.
Ingredients
- 1 pound ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 3 potatoes, peeled and diced
- 2 carrots, sliced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) corn, drained
- 4 cups beef broth
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
Instructions
- Brown the ground beef in a skillet over medium heat.
- Add the onion and garlic, cook until softened.
- Transfer the beef mixture to a crock pot.
- Add potatoes, carrots, tomatoes, corn, beef broth, salt, pepper, and thyme.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot.
Notes
- You can substitute ground turkey for ground beef.
- Add other vegetables like celery or green beans if desired.
- Store leftovers in the fridge for up to 3 days.
