A nutritious soup packed with healthy carbs to fuel your workout.
Ingredients
- 1 cup quinoa
- 2 cups vegetable broth
- 1 carrot, diced
- 1 celery stalk, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp turmeric
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, cook until soft.
- Add carrot and celery, cook for 5 minutes.
- Stir in quinoa and spices.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Serve warm.
Notes
- Store leftovers in the fridge for up to 3 days.
- Add more broth if you prefer a thinner soup.
- You can substitute quinoa with brown rice.
