Ingredients

  • 2 cups whole wheat flour
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 tbsp honey
  • 1 packet active dry yeast
  • 1 cup warm water
  • 1 tbsp olive oil
  • 1/4 cup baking soda
  • 1 egg white (for brushing)
  • Coarse sea salt (for topping)


Instructions

  1. Dissolve yeast and honey in warm water. Let it sit for 5 minutes until frothy.
  2. Mix whole wheat flour, all-purpose flour, and salt in a bowl.
  3. Add yeast mixture and olive oil to the dry ingredients. Knead until smooth.
  4. Cover and let the dough rise for 1 hour or until doubled in size.
  5. Preheat oven to 425°F (220°C). Boil 4 cups of water with baking soda.
  6. Shape dough into small rolls or pretzel shapes.
  7. Boil each piece for 30 seconds, then place on a baking sheet.
  8. Brush with egg white and sprinkle with coarse sea salt.
  9. Bake for 12-15 minutes or until golden brown.
  10. Cool on a wire rack before serving.
