Description
A healthy twist on traditional quesabirria tacos, packed with flavor and nutrients.
Ingredients
- 1 lb lean beef (or chicken for a lighter option)
- 2 cups low-sodium beef broth
- 1 tbsp olive oil
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp oregano
- 1/2 tsp chili powder
- 8 corn tortillas
- 1 cup reduced-fat cheese, shredded
- 1/4 cup fresh cilantro, chopped
- 1 lime, cut into wedges
Instructions
- Heat olive oil in a pot over medium heat. Add onion and garlic, cook until soft.
- Add beef, cumin, paprika, oregano, and chili powder. Cook until browned.
- Pour in beef broth, bring to a boil, then simmer for 1 hour.
- Shred the cooked beef and set aside.
- Dip tortillas in the broth, then fill with beef and cheese.
- Fold tortillas and cook on a skillet until crispy.
- Serve with cilantro and lime wedges.
