Ingredients
- 1.5 lbs baby potatoes, halved
- 2 tbsp olive oil
- 1 tsp truffle salt
- 1/2 tsp black pepper
- 1 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes with olive oil, truffle salt, and black pepper.
- Spread potatoes in a single layer on a baking sheet.
- Roast for 25-30 minutes until golden and tender.
- Sprinkle with fresh parsley before serving.
