Ingredients
- 1 lb lean ground beef
- 1 cup pearl barley
- 4 cups low-sodium beef broth
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 tsp olive oil
- Salt and black pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook until softened, about 5 minutes.
- Add garlic and cook for 1 minute.
- Add ground beef and cook until browned, breaking it apart with a spoon.
- Stir in barley and beef broth. Bring to a boil.
- Reduce heat and simmer for 20 minutes until barley is tender.
- Season with salt and pepper. Serve hot.
