Description

A healthy and quick Mexican-inspired barley casserole with ground turkey, packed with protein and fiber.


Ingredients

  • 1 cup pearl barley
  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can black beans, drained
  • 1 can diced tomatoes
  • 1 cup corn
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1/2 cup shredded cheese (optional)


Instructions

  1. Cook barley according to package instructions.
  2. Heat olive oil in a skillet and brown ground turkey.
  3. Add onion, garlic, and bell pepper. Cook until softened.
  4. Stir in black beans, tomatoes, corn, cumin, and chili powder.
  5. Combine cooked barley with turkey mixture.
  6. Top with cheese if using and bake at 350°F for 15 minutes.
