Description
A healthy and quick Mexican-inspired barley casserole with ground turkey, packed with protein and fiber.
Ingredients
- 1 cup pearl barley
- 1 lb ground turkey
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can black beans, drained
- 1 can diced tomatoes
- 1 cup corn
- 1 tbsp olive oil
- 1 tsp cumin
- 1 tsp chili powder
- Salt and pepper to taste
- 1/2 cup shredded cheese (optional)
Instructions
- Cook barley according to package instructions.
- Heat olive oil in a skillet and brown ground turkey.
- Add onion, garlic, and bell pepper. Cook until softened.
- Stir in black beans, tomatoes, corn, cumin, and chili powder.
- Combine cooked barley with turkey mixture.
- Top with cheese if using and bake at 350°F for 15 minutes.
Notes
- Use quinoa instead of barley for a gluten-free option.
- Add hot sauce for extra spice.
- Store leftovers in the fridge for up to 3 days.
