A hearty and healthy soup that captures the flavors of traditional cabbage rolls in an easy slow-cooker recipe.
Ingredients
- 1 lb lean ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 small head cabbage, chopped
- 1 (28 oz) can diced tomatoes
- 4 cups low-sodium beef broth
- 1/2 cup uncooked long-grain white rice
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
Instructions
- Brown the ground beef with onion and garlic in a skillet over medium heat. Drain fat.
- Transfer the beef mixture to a slow cooker.
- Add chopped cabbage, diced tomatoes, beef broth, rice, thyme, and paprika.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Season with salt and pepper before serving.

- Use ground turkey for a leaner option.
- Add 1/2 cup tomato sauce for richer flavor.
- Substitute cauliflower rice for fewer carbs.
