A quick and healthy twist on classic lasagna using tortellini for a faster, easier meal.


Ingredients

  • 1 package (20 oz) cheese tortellini
  • 1 jar (24 oz) marinara sauce
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 1 tbsp olive oil


Instructions

  1. Preheat oven to 375°F.
  2. Cook tortellini according to package directions. Drain and toss with olive oil.
  3. Mix ricotta cheese, Italian seasoning, garlic powder, and black pepper in a bowl.
  4. Spread 1/2 cup marinara sauce in the bottom of a baking dish.
  5. Layer cooked tortellini, ricotta mixture, remaining sauce, and cheeses.
  6. Bake for 20 minutes or until cheese is bubbly and golden.

Notes

  • Use whole wheat tortellini for extra fiber.
