A nutritious and protein-packed bread made with quinoa, perfect for a healthy diet.
Ingredients
- 1 cup cooked quinoa
- 2 cups whole wheat flour
- 1/2 cup almond flour
- 1/4 cup flaxseeds
- 2 tsp baking powder
- 1/2 tsp salt
- 1 cup almond milk
- 2 eggs (or flax eggs for vegan option)
- 2 tbsp olive oil
- 1 tbsp honey or maple syrup
Instructions
- Preheat oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix quinoa, whole wheat flour, almond flour, flaxseeds, baking powder, and salt.
- In another bowl, whisk almond milk, eggs (or flax eggs), olive oil, and honey.
- Combine wet and dry ingredients until well mixed.
- Pour batter into the loaf pan and smooth the top.
- Bake for 45-50 minutes or until a toothpick comes out clean.
- Let cool before slicing.
Notes
- Store in an airtight container for up to 5 days.
- For a vegan version, use flax eggs instead of eggs.
- Add nuts or seeds for extra crunch.
