Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 1 red bell pepper, chopped
- 1 zucchini, diced
- 1 cup chopped kale
- 4 cups vegetable broth
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and cook until softened, about 3 minutes.
- Add carrots and bell pepper. Cook for 5 minutes.
- Stir in zucchini and kale. Cook for 2 minutes.
- Pour in vegetable broth and add thyme.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Season with salt and pepper.
- Serve warm.
