Ingredients

  • 1 onion, diced
  • 2 carrots, sliced
  • 1 red bell pepper, chopped
  • 1 zucchini, diced
  • 1 cup chopped kale
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and cook until softened, about 3 minutes.
  3. Add carrots and bell pepper. Cook for 5 minutes.
  4. Stir in zucchini and kale. Cook for 2 minutes.
  5. Pour in vegetable broth and add thyme.
  6. Bring to a boil, then reduce heat and simmer for 15 minutes.
  7. Season with salt and pepper.
  8. Serve warm.
