Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14 oz)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 9 oz cheese ravioli
  • 2 cups fresh spinach
  • 1/4 cup grated parmesan cheese


Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery. Cook for 5 minutes.
  3. Stir in garlic and cook for 30 seconds.
  4. Pour in vegetable broth and diced tomatoes.
  5. Add basil, oregano, salt, and pepper. Bring to a boil.
  6. Reduce heat and simmer for 10 minutes.
  7. Add ravioli and cook for 5 minutes.
  8. Stir in spinach until wilted.
  9. Serve hot with parmesan cheese.
