A nutritious and hearty ravioli soup packed with vegetables and flavor.
Ingredients
- 1 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 3 garlic cloves, minced
- 4 cups vegetable broth
- 1 can diced tomatoes (14 oz)
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 9 oz cheese ravioli
- 2 cups fresh spinach
- 1/4 cup grated parmesan cheese
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery. Cook for 5 minutes.
- Stir in garlic and cook for 30 seconds.
- Pour in vegetable broth and diced tomatoes.
- Add basil, oregano, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for 10 minutes.
- Add ravioli and cook for 5 minutes.
- Stir in spinach until wilted.
- Serve hot with parmesan cheese.

- Use frozen ravioli for quicker cooking.
- Swap spinach with kale for variation.
