Description

A nutritious and flavorful soup made with red lentils and fresh lemon.


Ingredients

  • 1 cup red lentils
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 celery stalk, diced
  • 1 lemon, juiced
  • 1 tsp cumin
  • 1 tsp turmeric
  • 1 tbsp olive oil
  • Salt and pepper to taste


Instructions

  1. Rinse the lentils under cold water.
  2. Heat olive oil in a pot and sauté onion, garlic, carrot, and celery for 5 minutes.
  3. Add lentils, vegetable broth, cumin, and turmeric. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes until lentils are soft.
  5. Stir in lemon juice and season with salt and pepper.
  6. Blend half the soup for a creamier texture if desired.
  7. Serve hot.
