Description
A nutritious and flavorful soup made with red lentils and fresh lemon.
Ingredients
- 1 cup red lentils
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 lemon, juiced
- 1 tsp cumin
- 1 tsp turmeric
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
- Rinse the lentils under cold water.
- Heat olive oil in a pot and sauté onion, garlic, carrot, and celery for 5 minutes.
- Add lentils, vegetable broth, cumin, and turmeric. Bring to a boil.
- Reduce heat and simmer for 20 minutes until lentils are soft.
- Stir in lemon juice and season with salt and pepper.
- Blend half the soup for a creamier texture if desired.
- Serve hot.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Add spinach or kale for extra greens.
- Adjust lemon juice to taste.
