Ingredients
- 2 cups red lentil pasta
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 small onion, diced
- 1 can (14 oz) diced tomatoes
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh basil leaves for garnish
Instructions
- Cook the red lentil pasta according to package instructions. Drain and set aside.
- Heat olive oil in a pan over medium heat. Add garlic and onion, sauté until softened.
- Stir in diced tomatoes, oregano, salt, and black pepper. Cook for 5 minutes.
- Add the cooked pasta to the sauce and toss to combine.
- Garnish with fresh basil leaves before serving.
Notes
- For extra protein, add grilled chicken or tofu.
