Description

Ingredients

  • 1 ribeye steak (8 oz)
  • 1 bunch broccolini
  • 2 large russet potatoes
  • 2 tbsp olive oil
  • 1/4 cup sour cream
  • 1/4 cup cheddar cheese
  • 1 tbsp butter
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 400°F.
  2. Bake potatoes for 45 minutes until tender.
  3. Scoop out potato flesh and mix with sour cream, cheese, butter, salt, and pepper.
  4. Return mixture to potato skins and bake for 15 minutes.
  5. Season ribeye with salt and pepper, cook in a skillet for 4 minutes per side.
  6. Steam broccolini for 3-4 minutes until tender.
  7. Serve steak, broccolini, and twice-baked potatoes together.
