Ingredients

  • 1 small head cabbage, chopped
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup Greek yogurt
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp lemon juice


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss chopped cabbage with olive oil, salt, pepper, and garlic powder.
  3. Spread on a baking sheet and roast for 25 minutes, stirring halfway.
  4. Let cool slightly, then transfer to a food processor.
  5. Add Greek yogurt, Parmesan, and lemon juice. Blend until smooth.
