Description

A creamy and flavorful potato bisque infused with roasted garlic for a healthy twist.


Ingredients

  • 4 large potatoes, peeled and diced
  • 1 whole head of garlic
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 1 cup milk (or plant-based milk for vegan option)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes.
  3. In a pot, sauté onions in olive oil until translucent.
  4. Add diced potatoes, vegetable broth, salt, pepper, and thyme. Simmer for 20 minutes.
  5. Squeeze roasted garlic cloves into the pot.
  6. Blend the soup until smooth.
  7. Stir in milk and heat through.
  8. Serve warm.

Notes

  • For a thicker soup, reduce the broth by 1 cup.
