A creamy and flavorful potato bisque infused with roasted garlic for a healthy twist.
Ingredients
- 4 large potatoes, peeled and diced
- 1 whole head of garlic
- 1 onion, chopped
- 4 cups vegetable broth
- 1 cup milk (or plant-based milk for vegan option)
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
Instructions
- Preheat oven to 400°F (200°C).
- Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes.
- In a pot, sauté onions in olive oil until translucent.
- Add diced potatoes, vegetable broth, salt, pepper, and thyme. Simmer for 20 minutes.
- Squeeze roasted garlic cloves into the pot.
- Blend the soup until smooth.
- Stir in milk and heat through.
- Serve warm.
Notes
- For a thicker soup, reduce the broth by 1 cup.
- Store leftovers in the refrigerator for up to 3 days.
- Garnish with fresh herbs if desired.
