A simple and healthy side dish featuring roasted red onions topped with creamy goat cheese.
Ingredients
- 2 large red onions, sliced into wedges
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 100g goat cheese, crumbled
Instructions
- Preheat your oven to 200°C (400°F).
- Toss the red onion wedges with olive oil, salt, pepper, and thyme.
- Spread the onions on a baking sheet in a single layer.
- Roast for 25-30 minutes until tender and slightly caramelized.
- Remove from the oven and sprinkle with crumbled goat cheese.
- Serve warm.
