Description
A simple and healthy roasted tomato and basil dip that pairs perfectly with crackers or fresh vegetables.
Ingredients
- 4 cups cherry tomatoes, halved
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1/4 cup fresh basil, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp red pepper flakes (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss tomatoes and garlic with olive oil, salt, and black pepper.
- Spread on a baking sheet and roast for 20 minutes.
- Let cool slightly, then transfer to a bowl.
- Add chopped basil and red pepper flakes (if using).
- Mash lightly with a fork or blend for a smoother texture.
- Serve warm or chilled.
Notes
- Store in an airtight container in the fridge for up to 3 days.
- Adjust seasoning to taste.
- For a creamier dip, mix in 1/4 cup Greek yogurt.
