A simple and healthy side dish featuring roasted onions flavored with rosemary and garlic.
Ingredients
- 4 medium onions, peeled and halved
- 3 cloves garlic, minced
- 1 tbsp fresh rosemary, chopped
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat your oven to 200°C (400°F).
- Toss onion halves with olive oil, garlic, rosemary, salt, and pepper.
- Arrange onions cut-side down on a baking sheet.
- Roast for 25-30 minutes until tender and caramelized.
- Serve warm as a side dish.
Notes
- Use yellow or red onions for best results.
- Add a splash of balsamic vinegar before roasting for extra flavor.
- Leftovers keep well refrigerated for 3 days.
