Description
A quick and healthy soup using rotisserie chicken for convenience.
Ingredients
- 1 rotisserie chicken, shredded
- 6 cups chicken broth
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp salt
- 1/2 tsp black pepper
- 1 cup frozen peas
Instructions
- Heat a large pot over medium heat.
- Add onion, carrots, celery, and garlic. Cook for 5 minutes.
- Pour in chicken broth and bring to a boil.
- Add shredded chicken, thyme, salt, and pepper.
- Simmer for 15 minutes.
- Stir in frozen peas and cook for 3 more minutes.
- Serve hot.

- Use leftover rotisserie chicken for faster prep.
- Adjust seasoning to taste.
- Add noodles or rice for extra heartiness.
