Ingredients

  • 1.5 lbs baby potatoes, halved
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 3 tbsp unsalted butter
  • 10 fresh sage leaves
  • 1 garlic clove, minced


Instructions

  1. Preheat oven to 400°F (200°C).
  2. Toss potatoes with olive oil, salt, and pepper.
  3. Spread potatoes on a baking sheet in a single layer.
  4. Roast for 30 minutes, flipping halfway.
  5. Melt butter in a small pan over medium heat.
  6. Add sage leaves and cook until butter turns golden brown.
  7. Stir in minced garlic and cook for 30 seconds.
  8. Drizzle browned butter sauce over roasted potatoes.
  9. Toss to coat evenly before serving.
