Description
A healthy Thanksgiving dish featuring salmon and broccoli rice casserole.
Ingredients
- 2 cups cooked brown rice
- 1 lb salmon fillet, skin removed
- 2 cups broccoli florets
- 1 cup low-fat milk
- 1/2 cup shredded low-fat cheese
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp salt
Instructions
- Preheat oven to 375°F.
- Cook brown rice according to package instructions.
- Cut salmon into bite-sized pieces.
- Steam broccoli florets for 3 minutes.
- Mix rice, salmon, broccoli, milk, cheese, olive oil, garlic powder, pepper, and salt in a bowl.
- Transfer to a baking dish.
- Bake for 25 minutes.
- Serve warm.
Notes
- Use fresh salmon for best results.
- Substitute cauliflower rice for lower carbs.
- Store leftovers in an airtight container for up to 3 days.
