Description

A healthy Thanksgiving dish featuring salmon and broccoli rice casserole.


Ingredients

  • 2 cups cooked brown rice
  • 1 lb salmon fillet, skin removed
  • 2 cups broccoli florets
  • 1 cup low-fat milk
  • 1/2 cup shredded low-fat cheese
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt


Instructions

  1. Preheat oven to 375°F.
  2. Cook brown rice according to package instructions.
  3. Cut salmon into bite-sized pieces.
  4. Steam broccoli florets for 3 minutes.
  5. Mix rice, salmon, broccoli, milk, cheese, olive oil, garlic powder, pepper, and salt in a bowl.
  6. Transfer to a baking dish.
  7. Bake for 25 minutes.
  8. Serve warm.
