Ingredients
- 1 cup farro
- 2 cups water or vegetable broth
- 2 (6 oz) salmon fillets
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 2 cups baby spinach
- 1/4 cup crumbled feta cheese (optional)
- 1/4 cup chopped fresh parsley
Instructions
- Cook farro in water or broth according to package instructions. Drain and set aside.
- Preheat oven to 400°F (200°C). Place salmon on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Bake salmon for 12-15 minutes or until fully cooked.
- Meanwhile, prepare green goddess dressing by blending avocado, parsley, lemon juice, garlic, and olive oil until smooth.
- Assemble bowls with farro, spinach, tomatoes, cucumber, and avocado slices.
- Top with baked salmon and drizzle with green goddess dressing.
- Garnish with crumbled feta if desired.
