Ingredients

  • 1 cup farro
  • 2 cups water or vegetable broth
  • 2 (6 oz) salmon fillets
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 2 cups baby spinach
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup chopped fresh parsley


Instructions

  1. Cook farro in water or broth according to package instructions. Drain and set aside.
