Ingredients

  • 1 cup farro, cooked
  • 2 salmon fillets, skin-on
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 2 cups baby spinach
  • 1/4 cup feta cheese, crumbled (optional)
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 1/4 cup green goddess dressing


Instructions

  1. Preheat oven to 400°F.
  2. Season salmon with salt, pepper, and 1 tbsp olive oil. Bake for 12-15 minutes until cooked through.
