Ingredients
- 1 lb turkey sausage
- 4 large eggs
- 1/2 cup cream cheese, softened
- 3 cups frozen shredded hashbrowns
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/4 cup shredded cheddar cheese
- 1 tbsp olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Cook sausage until browned, then set aside.
- In the same skillet, sauté bell peppers and onions until softened.
- In a bowl, whisk eggs, cream cheese, salt, pepper, and garlic powder until smooth.
- Combine hashbrowns, cooked sausage, and sautéed vegetables in a greased baking dish.
- Pour egg mixture over the top and sprinkle with cheddar cheese.
- Bake for 30-35 minutes or until eggs are set.
- Let cool slightly before serving.
Notes
- For extra crispiness, broil for 2-3 minutes at the end.
- Substitute turkey sausage with chicken or plant-based sausage if preferred.
- Store leftovers in the fridge for up to 3 days.
