Description
A healthy twist on classic lasagna with sausage and rolled-up noodles.
Ingredients
- 8 lasagna noodles
- 1 lb lean turkey sausage
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella
- 1/4 cup grated Parmesan
- 1 egg
- 1 tsp dried basil
- 1 tsp dried oregano
- 2 cups marinara sauce
Instructions
- Cook lasagna noodles according to package directions.
- Brown turkey sausage in a skillet.
- Mix ricotta, mozzarella, Parmesan, egg, basil, and oregano in a bowl.
- Spread cheese mixture on cooked noodles.
- Top with cooked sausage.
- Roll up noodles and place seam-side down in a baking dish.
- Pour marinara sauce over roll-ups.
- Bake at 375°F for 25 minutes.
Notes
- Use whole wheat noodles for extra fiber.
- Substitute cottage cheese for ricotta if preferred.
- Add spinach for more vegetables.
