Description

A healthy twist on classic lasagna with sausage and rolled-up noodles.


Ingredients

  • 8 lasagna noodles
  • 1 lb lean turkey sausage
  • 1 cup ricotta cheese
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated Parmesan
  • 1 egg
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 2 cups marinara sauce


Instructions

  1. Cook lasagna noodles according to package directions.
  2. Brown turkey sausage in a skillet.
  3. Mix ricotta, mozzarella, Parmesan, egg, basil, and oregano in a bowl.
  4. Spread cheese mixture on cooked noodles.
  5. Top with cooked sausage.
  6. Roll up noodles and place seam-side down in a baking dish.
  7. Pour marinara sauce over roll-ups.
  8. Bake at 375°F for 25 minutes.

Notes

  • Use whole wheat noodles for extra fiber.
