Description
A flavorful and healthy rice dish packed with fresh herbs and simple ingredients. Perfect as a side or a light main course.
Ingredients
- 1 cup long-grain white rice
- 2 cups water or low-sodium vegetable broth
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/4 cup fresh dill, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tsp lemon zest
- 1 tbsp lemon juice
Instructions
- Rinse the rice under cold water until the water runs clear.
- Heat olive oil in a medium pot over medium heat. Add onion and garlic, sauté until soft.
- Add the rice and stir for 1-2 minutes to lightly toast.
- Pour in water or broth, then add salt and black pepper. Bring to a boil.
- Reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender.
- Remove from heat and let it sit covered for 5 minutes.
- Fluff the rice with a fork, then mix in the fresh herbs, lemon zest, and lemon juice.
- Serve warm.
Notes
- Use basmati or jasmine rice for extra fragrance.
- Adjust herbs to your preference.
- Add chopped nuts or dried fruit for extra texture.
