Description

Ingredients

  • 1 cup long-grain white rice
  • 2 cups water or low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/4 cup fresh dill, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp lemon zest
  • 1 tbsp lemon juice


Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil in a medium pot over medium heat. Add onion and garlic, sauté until soft.
  3. Add the rice and stir for 1-2 minutes to lightly toast.
  4. Pour in water or broth, then add salt and black pepper. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 15-18 minutes until rice is tender.
  6. Remove from heat and let it sit covered for 5 minutes.
  7. Fluff the rice with a fork, then mix in the fresh herbs, lemon zest, and lemon juice.
  8. Serve warm.
