Description

A wholesome and hearty casserole combining tender potatoes, cabbage, and a creamy sauce for a nutritious and satisfying dish.


Ingredients

  • 4 medium potatoes, thinly sliced
  • 2 cups cabbage, shredded
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup low-fat milk
  • 1/2 cup low-sodium chicken or vegetable broth
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/4 tsp salt
  • 1/4 cup grated Parmesan cheese (optional)


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until soft.
  3. Add cabbage and cook for 5 minutes until slightly tender.
  4. Layer half the potatoes in the baking dish. Top with half the cabbage mixture. Repeat layers.
  5. Mix milk, broth, thyme, pepper, and salt. Pour over the layers.
  6. Cover with foil and bake for 40 minutes.
  7. Remove foil, sprinkle with Parmesan if using, and bake for another 15 minutes until golden and bubbly.
  8. Let rest for 5 minutes before serving.

  • Use a mandoline for even potato slices.
  • Substitute vegetable broth for a vegetarian version.
