Description
A delicious and healthy seafood lasagna featuring shrimp and crab, layered with whole wheat noodles and a light cheese sauce.
Ingredients
- 8 oz whole wheat lasagna noodles
- 1 lb shrimp, peeled and deveined
- 1 lb crab meat
- 2 cups low-fat ricotta cheese
- 1 egg
- 1 cup shredded part-skim mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 cups marinara sauce
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions, then drain and set aside.
- In a skillet, heat olive oil and sauté garlic for 1 minute. Add shrimp and cook until pink, about 3 minutes. Remove from heat and mix with crab meat.
- In a bowl, combine ricotta cheese, egg, basil, oregano, salt, and pepper.
- Spread a thin layer of marinara sauce in a baking dish. Add a layer of noodles, then half the ricotta mixture, and half the seafood.
- Repeat layers, ending with noodles and remaining marinara sauce. Top with mozzarella and Parmesan.
- Cover with foil and bake for 25 minutes. Remove foil and bake for another 10 minutes until cheese is bubbly.
- Let rest for 10 minutes before serving.
Notes
- Use fresh crab for best flavor, but canned works too.
- Add spinach or mushrooms for extra nutrients.
- Store leftovers in an airtight container for up to 3 days.
