Ingredients

  • 8 oz whole wheat pasta
  • 1 lb cooked shrimp, peeled and deveined
  • 1 cup cherry tomatoes, halved
  • 1/2 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. Cook pasta according to package instructions. Drain and rinse under cold water.
  2. In a large bowl, combine pasta, shrimp, cherry tomatoes, cucumber, red onion, and parsley.
