Description

A simple no-knead bread packed with seeds and oats for a healthy, hearty loaf.


Ingredients

  • 3 cups whole wheat flour
  • 1 cup rolled oats
  • 1/4 cup mixed seeds (sunflower, pumpkin, flax)
  • 1 tsp salt
  • 1 tsp instant yeast
  • 1 1/2 cups warm water
  • 1 tbsp honey


Instructions

  1. Mix flour, oats, seeds, salt, and yeast in a large bowl.
  2. Add warm water and honey. Stir until combined.
  3. Cover with a damp cloth and let rise for 12-18 hours.
  4. Preheat oven to 450°F (230°C). Place a Dutch oven inside to heat.
  5. Transfer dough to the hot Dutch oven. Bake covered for 30 minutes.
  6. Remove lid and bake for another 15 minutes until golden.
  7. Cool before slicing.

Notes

  • Letting the dough rise overnight improves flavor.
  • Adjust water if dough is too dry or sticky.
  • Store in an airtight container for up to 3 days.
