Description
A simple and healthy one-pan meal with chicken, bell peppers, and potatoes seasoned with fajita spices.
Ingredients
- 1 lb boneless, skinless chicken , sliced
- 2 medium potatoes, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 1 lime, juiced
- Fresh cilantro for garnish
Instructions
- Preheat oven to 400°F (200°C).
- In a large bowl, toss chicken, potatoes, bell peppers, and onion with olive oil, fajita seasoning, salt, and black pepper.
- Spread evenly on a sheet pan.
- Bake for 25 minutes or until chicken is cooked through and potatoes are tender.
- Squeeze lime juice over the top and garnish with cilantro.
- Serve warm.
Notes
- For extra crispiness, broil for the last 2 minutes.
- Adjust seasoning to your taste.
- Use any color bell peppers available.
