Description

A simple and healthy one-pan meal with chicken, bell peppers, and potatoes seasoned with fajita spices.


Ingredients

  • 1 lb boneless, skinless chicken , sliced
  • 2 medium potatoes, diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 lime, juiced
  • Fresh cilantro for garnish


Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss chicken, potatoes, bell peppers, and onion with olive oil, fajita seasoning, salt, and black pepper.
  3. Spread evenly on a sheet pan.
  4. Bake for 25 minutes or until chicken is cooked through and potatoes are tender.
  5. Squeeze lime juice over the top and garnish with cilantro.
  6. Serve warm.

Notes

  • For extra crispiness, broil for the last 2 minutes.
  • Adjust seasoning to your taste.
