Description
A simple and healthy one-pan meal with tender pork chops, roasted apples, and potatoes.
Ingredients
- 4 boneless pork chops (about 1 inch thick)
- 2 medium apples, cored and sliced
- 4 medium potatoes, cubed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1 tsp garlic powder
Instructions
- Preheat oven to 400°F (200°C).
- Toss potatoes and apples with 1 tbsp olive oil, salt, pepper, thyme, and garlic powder.
- Spread potatoes and apples on a sheet pan in a single layer.
- Rub pork chops with remaining olive oil and season with salt and pepper.
- Place pork chops on the sheet pan between the potatoes and apples.
- Bake for 20-25 minutes or until pork reaches 145°F (63°C).
- Let rest for 3 minutes before serving.
Notes
- Use a meat thermometer for accurate doneness.
- Swap sweet potatoes for regular potatoes if preferred.
- Add a sprinkle of rosemary for extra flavor.
