Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh parsley, chopped (optional)


Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, toss sweet potatoes and chickpeas with olive oil, paprika, cumin, garlic powder, salt, and pepper.
  3. Spread the mixture evenly on a sheet pan.
  4. Roast for 25-30 minutes, stirring halfway, until sweet potatoes are tender.
