Ingredients
- 2 medium sweet potatoes, peeled and cubed
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 tbsp olive oil
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, toss sweet potatoes and chickpeas with olive oil, paprika, cumin, garlic powder, salt, and pepper.
- Spread the mixture evenly on a sheet pan.
- Roast for 25-30 minutes, stirring halfway, until sweet potatoes are tender.
- Garnish with fresh parsley if desired.

- For extra crispiness, roast for an additional 5 minutes.
