Description
A simple and healthy sheet pan meal featuring sweet potatoes and sausage with a sweet and spicy glaze.
Ingredients
- 2 large sweet potatoes, peeled and cubed
- 1 lb smoked sausage, sliced
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tsp smoked paprika
- 1/2 tsp cayenne pepper
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp fresh parsley, chopped (optional)
Instructions
- Preheat oven to 400°F (200°C).
- Toss sweet potatoes and sausage with olive oil, honey, smoked paprika, cayenne, garlic powder, salt, and black pepper.
- Spread evenly on a sheet pan.
- Roast for 25-30 minutes, stirring halfway, until potatoes are tender.
- Sprinkle with fresh parsley before serving.
Notes
- Adjust cayenne pepper for more or less heat.
- Use turkey sausage for a leaner option.
- Store leftovers in an airtight container for up to 3 days.
