Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 avocados, sliced
  • 1 mango, diced
  • 1/2 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • Salt and pepper to taste


Instructions

  1. In a bowl, mix mango, red onion, jalapeño, cilantro, and half the lime juice for the salsa. Set aside.
  2. Heat olive oil in a pan over medium heat. Add shrimp, chili powder, salt, and pepper. Cook for 2-3 minutes per side until pink.
  3. Drizzle remaining lime juice over the shrimp.
