Description

A hearty and healthy beef stew made in the slow cooker for an easy, comforting meal.


Ingredients

  • 1.5 lbs beef stew meat, cubed
  • 2 cups carrots, chopped
  • 2 cups potatoes, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Brown the beef in a skillet over medium-high heat for 3-4 minutes.
  2. Transfer the beef to the slow cooker.
  3. Add carrots, potatoes, onion, and garlic to the slow cooker.
  4. In a bowl, whisk together beef broth and tomato paste, then pour over the ingredients.
  5. Add thyme, rosemary, bay leaf, salt, and pepper.
  6. Cover and cook on low for 7-8 hours or high for 4-5 hours.
  7. Remove the bay leaf before serving.

Notes

  • For extra flavor, sear the beef in batches.
  • Add frozen peas or corn in the last 30 minutes of cooking.
  • Store leftovers in an airtight container for up to 3 days.
