Description
A hearty and healthy beef stew made in the slow cooker for an easy, comforting meal.
Ingredients
- 1.5 lbs beef stew meat, cubed
- 2 cups carrots, chopped
- 2 cups potatoes, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium beef broth
- 1 tbsp tomato paste
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Brown the beef in a skillet over medium-high heat for 3-4 minutes.
- Transfer the beef to the slow cooker.
- Add carrots, potatoes, onion, and garlic to the slow cooker.
- In a bowl, whisk together beef broth and tomato paste, then pour over the ingredients.
- Add thyme, rosemary, bay leaf, salt, and pepper.
- Cover and cook on low for 7-8 hours or high for 4-5 hours.
- Remove the bay leaf before serving.
Notes
- For extra flavor, sear the beef in batches.
- Add frozen peas or corn in the last 30 minutes of cooking.
- Store leftovers in an airtight container for up to 3 days.
