Description
A hearty and nutritious butternut squash soup made easy in your slow cooker. Perfect for a cozy meal.
Ingredients
- 1 medium butternut squash, peeled and cubed
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tsp ground cumin
- 1/2 tsp ground cinnamon
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 1 tbsp olive oil
Instructions
- Heat olive oil in a pan and sauté onion and garlic until soft.
- Transfer to the slow cooker with butternut squash, broth, and spices.
- Cover and cook on low for 6 hours or high for 3 hours.
- Blend the soup until smooth.
- Season with salt and pepper to taste.

- Store leftovers in the fridge for up to 3 days.
- Freeze for up to 3 months.
