A hearty and healthy soup that captures the flavors of traditional cabbage rolls without the fuss. Perfect for a cozy meal.
Ingredients
- 1 lb lean ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 small head cabbage, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (28 oz) diced tomatoes
- 4 cups low-sodium beef broth
- 1/2 cup uncooked brown rice
- 1 tsp dried thyme
- 1 tsp dried oregano
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add onions and garlic to the skillet. Cook until softened.
- Transfer the beef mixture to a slow cooker.
- Add cabbage, carrots, celery, diced tomatoes, beef broth, rice, thyme, oregano, and bay leaf.
- Stir to combine. Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Remove the bay leaf before serving. Season with salt and pepper.
Notes
- For a vegetarian version, substitute ground beef with lentils.
- Store leftovers in an airtight container for up to 3 days.
- Freezes well for up to 2 months.
