A nutritious and flavorful chicken fajita soup made easily in your slow cooker. Packed with lean protein and fresh vegetables.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow onion, sliced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 4 cups low-sodium chicken broth
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp lime juice
- 2 tbsp chopped fresh cilantro
Instructions
- Place chicken breasts in the slow cooker.
- Add bell peppers, onion, garlic, diced tomatoes, and chicken broth.
- Season with chili powder, cumin, paprika, salt, and black pepper.
- Cover and cook on low for 6-7 hours or high for 3-4 hours.
- Remove chicken, shred it, and return to the pot.
- Stir in lime juice and cilantro before serving.
Notes
- Use fresh lime juice for best flavor.
- Serve with avocado slices or a dollop of Greek yogurt.
- Store leftovers in the fridge for up to 3 days.
