Description

A hearty and healthy slow cooker chicken noodle soup made from scratch with simple ingredients.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 6 cups low-sodium chicken broth
  • 2 cups water
  • 3 carrots, sliced
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • 1/2 tsp black pepper
  • 2 cups egg noodles
  • 1 tbsp olive oil
  • Salt to taste


Instructions

  1. Heat olive oil in a skillet over medium heat. Add chicken and cook until lightly browned.
  2. Transfer chicken to the slow cooker.
  3. Add broth, water, carrots, celery, onion, garlic, thyme, parsley, and black pepper to the slow cooker.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. Remove chicken, shred it, and return it to the slow cooker.
  6. Add egg noodles and cook for another 20-30 minutes until noodles are tender.
  7. Season with salt if needed.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Freeze without noodles for longer storage.
  • Use whole wheat noodles for extra fiber.
