Description
A hearty and healthy slow cooker chicken noodle soup made from scratch with simple ingredients.
Ingredients
- 1 lb boneless, skinless chicken breasts
- 6 cups low-sodium chicken broth
- 2 cups water
- 3 carrots, sliced
- 2 celery stalks, chopped
- 1 onion, diced
- 2 garlic cloves, minced
- 1 tsp dried thyme
- 1 tsp dried parsley
- 1/2 tsp black pepper
- 2 cups egg noodles
- 1 tbsp olive oil
- Salt to taste
Instructions
- Heat olive oil in a skillet over medium heat. Add chicken and cook until lightly browned.
- Transfer chicken to the slow cooker.
- Add broth, water, carrots, celery, onion, garlic, thyme, parsley, and black pepper to the slow cooker.
- Cover and cook on low for 6 hours or high for 3 hours.
- Remove chicken, shred it, and return it to the slow cooker.
- Add egg noodles and cook for another 20-30 minutes until noodles are tender.
- Season with salt if needed.
Notes
- Store leftovers in an airtight container for up to 3 days.
- Freeze without noodles for longer storage.
- Use whole wheat noodles for extra fiber.
