Description

A healthy twist on classic French onion soup made in a slow cooker for easy preparation.


Ingredients

  • 4 large onions, thinly sliced
  • 2 tbsp olive oil
  • 4 cups low-sodium beef broth
  • 2 cups water
  • 1 tsp thyme
  • 1 bay leaf
  • 1/2 tsp black pepper
  • 4 slices whole wheat bread
  • 1/2 cup shredded low-fat Swiss cheese


Instructions

  1. Heat olive oil in a pan and sauté onions until caramelized
  2. Transfer onions to slow cooker
  3. Add broth, water, thyme, bay leaf, and pepper
  4. Cook on low for 6-8 hours
  5. Toast whole wheat bread slices
  6. Ladle soup into bowls, top with toast and cheese
  7. Broil for 2 minutes until cheese melts
