Description
A healthy twist on classic French onion soup made in a slow cooker for easy preparation.
Ingredients
- 4 large onions, thinly sliced
- 2 tbsp olive oil
- 4 cups low-sodium beef broth
- 2 cups water
- 1 tsp thyme
- 1 bay leaf
- 1/2 tsp black pepper
- 4 slices whole wheat bread
- 1/2 cup shredded low-fat Swiss cheese
Instructions
- Heat olive oil in a pan and sauté onions until caramelized
- Transfer onions to slow cooker
- Add broth, water, thyme, bay leaf, and pepper
- Cook on low for 6-8 hours
- Toast whole wheat bread slices
- Ladle soup into bowls, top with toast and cheese
- Broil for 2 minutes until cheese melts
Notes
- Use sweet onions for best flavor
- Can substitute vegetable broth for vegetarian version
- Store leftovers in refrigerator for up to 3 days
