Description

A healthy twist on classic lasagna made in a slow cooker for easy preparation and rich flavors.


Ingredients

  • 9 lasagna noodles, uncooked
  • 1 lb lean ground turkey
  • 1 jar (24 oz) marinara sauce
  • 1 cup part-skim ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 2 cups fresh spinach, chopped


Instructions

  1. Brown the ground turkey in a skillet over medium heat until fully cooked. Drain excess fat.
  2. In a bowl, mix ricotta cheese, egg, basil, oregano, and garlic powder.
  3. Spread a thin layer of marinara sauce at the bottom of the slow cooker.
  4. Place 3 uncooked lasagna noodles over the sauce, breaking them to fit if needed.
  5. Layer half the turkey, half the ricotta mixture, half the spinach, and a third of the mozzarella and Parmesan cheeses.
  6. Repeat layers: sauce, noodles, remaining turkey, ricotta mixture, spinach, and another third of the cheeses.
  7. Top with the last 3 noodles, remaining sauce, and remaining cheeses.
  8. Cover and cook on low for 4-5 hours or until noodles are tender.
  9. Let stand for 10 minutes before serving.

Notes

  • You can substitute ground turkey with ground chicken or lean beef.
  • For a vegetarian version, replace meat with sautéed mushrooms or lentils.
  • Store leftovers in an airtight container for up to 3 days.
