Ingredients

  • 2 cups chickpeas, cooked
  • 1 cup diced tomatoes
  • 1 cup chopped bell peppers
  • 1/2 cup chopped red onion
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • 1/2 tsp black pepper
  • 4 cups vegetable broth
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh cilantro


Instructions

  1. Heat olive oil in a pan over medium heat. Sauté onions and garlic until soft.
  2. Add bell peppers and cook for 3 minutes.
  3. Transfer the mixture to a slow cooker.
  4. Add chickpeas, diced tomatoes, cumin, paprika, turmeric, black pepper, and vegetable broth. Stir well.
  5. Cook on low for 6 hours or high for 3 hours.
  6. Stir in fresh parsley and cilantro before serving.

Notes

  • Soak dried chickpeas overnight if not using canned.
  • Adjust spices to taste.
