A hearty and nutritious stew packed with Mediterranean flavors, perfect for a healthy meal.
Ingredients
- 2 cups chickpeas, cooked
- 1 cup diced tomatoes
- 1 cup chopped bell peppers
- 1/2 cup chopped red onion
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1/2 tsp turmeric
- 1/2 tsp black pepper
- 4 cups vegetable broth
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh cilantro
Instructions
- Heat olive oil in a pan over medium heat. Sauté onions and garlic until soft.
- Add bell peppers and cook for 3 minutes.
- Transfer the mixture to a slow cooker.
- Add chickpeas, diced tomatoes, cumin, paprika, turmeric, black pepper, and vegetable broth. Stir well.
- Cook on low for 6 hours or high for 3 hours.
- Stir in fresh parsley and cilantro before serving.
Notes
- Soak dried chickpeas overnight if not using canned.
- Adjust spices to taste.
- Serve with crusty bread or rice.
