Description

A festive and healthy snowball coconut yule log cake perfect for holiday celebrations. This dessert is light, flavorful, and easy to make.


Ingredients

  • 2 cups shredded coconut
  • 1 cup almond flour
  • 1/2 cup coconut oil, melted
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 cup coconut cream
  • 1 tbsp cocoa powder (optional for decoration)


Instructions

  1. In a bowl, mix shredded coconut, almond flour, melted coconut oil, maple syrup, vanilla extract, and salt.
  2. Shape the mixture into a log and place it on a baking sheet lined with parchment paper.
  3. Freeze for 30 minutes to set.
  4. Remove from the freezer and spread coconut cream over the log.
  5. Roll the log in extra shredded coconut to coat evenly.
  6. Dust with cocoa powder if desired for a snowball effect.
  7. Chill for another 15 minutes before serving.

Notes

  • Store leftovers in the refrigerator for up to 3 days.
  • For a nut-free version, replace almond flour with oat flour.
