Ingredients
- 1 lb lean ground beef
- 1 large sweet potato, diced
- 1 bell pepper, chopped
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/4 cup fresh cilantro, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add onions and cook until translucent.
- Add garlic and cook for 30 seconds.
- Add ground beef and cook until browned.
- Stir in sweet potatoes, bell pepper, and spices.
- Cover and cook for 10-12 minutes until potatoes are tender.
- Garnish with fresh cilantro before serving.
Notes
- Dice sweet potatoes small for faster cooking.
- Use 93% lean beef for best results.
- Add black beans for extra fiber.
