Description
A simple and healthy roasted pepper dip with smoky Spanish flavors. Low-calorie and packed with vitamins.
Ingredients
- 2 red bell peppers
- 1 yellow bell pepper
- 2 cloves garlic
- 1 tbsp olive oil
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1 tbsp lemon juice
Instructions
- Preheat oven to 400°F (200°C)
- Cut peppers into quarters and remove seeds
- Place peppers and garlic on baking sheet
- Drizzle with olive oil
- Roast for 25 minutes until skin blisters
- Peel skins off peppers
- Blend all ingredients in food processor
- Chill for 1 hour before serving
Notes
- Store in airtight container for up to 5 days
- Serve with vegetable sticks or whole grain crackers
- Add 1/4 tsp cayenne for spicy version
